Ad Agio – Montecucco Sangiovese Riserva D.O.C.G.

Soil: altitude 350 meters; exposure South West; mostly calcareous.

Grape varieties:  Sangiovese  100% . Organic grapes. Special Selection.

Planting density: 4600 plants per hectare.

Kg of grape per plant: 1,2 kg.

Harvesting method: manually in crates of 18 kg with transferring and transformation within  60 minutes of the harvest.

Fermentation:  In big oaks barrels, at controlled temperature of 28° C max.

Aging period: 24 months in French oak tonneaux (allier, troncais).  Then 24 months in the bottle.

Alcohol: 14.0° vol

Filtration: None. To preserve wine integrity.

Food and wine pairing: Perfect with red meat and with game. Ideal also with mature cheese.

Drink: 18°C, if possible in decanter.
