Cartacanta – Montecucco Sangiovese D.O.C.G.

Soil: altitude 350 meters; exposure South West; mostly calcareous.

Grape varieties: Sangiovese 90% Merlot 10% and Ciliegiolo 10%. Organic grapes.

Planting density: 4600 plants per hectare.

Kg of grape per plant: 1,5 kg.

Harvesting method: manually in crates of 18 kg with transferring and transformation within  60 minutes of the harvest.

Fermentation:  in stainless steel of superior quality AISI 316, at controlled temperature of 28° C max.

Aging period: 12 months  in French oak Tonneaux. Then 18 months in the bottle.

Alcohol: 14.5° vol

Filtration: None. To preserve wine integrity.

Food and wine pairing: Perfect with red meat and with game. Ideal also with mature cheese.

Drink: 18°C, if possible in decanter.
