Fermentation: in stainless steel of superior quality AISI 316, at controlled temperature of 28° C max.
Aging period: 15 months in French oak small barrels (allier, troncais). Then 24 months in the bottle.
Alcohol: 14.0° vol.
Filtration: None. To preserve wine integrity.
Food and wine pairing: Perfect with red meat and with game. Ideal also with mature cheese.
Drink: 18°C, if possible in decanter.
